What is the deference between these two?
Knowing is to understand something with given proof, while believing is to have faith without proof. We do not actually believe in science. The more precise word is we understand science because it is shown by given proof. After viewing all the proof, we know what is actually happening and what is real.
That is the reason why we can only say we believe in God because there is no proof that He exists. If there were solid evidence that God existed, then we would no longer believe in Him; instead, we would know that God really exists.
When we say we believe in someone or something it shows that we truly trust them/it without having to rely on proof. However when we request for proof, it shows we do not believe in them/it, but need to know the truth.
To believe in someone or something, it requires a great deal of faith. Do you really have that much faith within yourself to hold to your belief?
